No, the data are encrypted
What dns the server is using
The server can use the google dns ( 8.8.8.8 , 8.8.4.4 ), cloudflare or any other dns you need.
Can i create specifich user/password for each device?
Yes, you will receive a documentation how to create new users for the vpn, how to delete the old users etc. In this way you will have full controll
Can i use a domain instead of ip?
Yes if you have a domain you can use it.
Can i use it for the servers?
Yes you can but support for this part is to be discussed according to the needs
