Working chef and restaurant project manager with 10+ years in restaurants, hotels and bars. I develop menus and the kitchen systems behind them: costed recipe cards, food cost, prep lists with par levels and SOPs. In one pub, write-offs fell from about 5 to 1 percent of revenue, A-class dishes grew from 50 to 80 percent and the Google rating rose from 4.5 to 4.7 in two months.
